Ingredients to make Oats Sorghum Banana Bread: Healthy Treats

  • oat flour, 1/2 cup, refer notes
  • sorghum/ jowar flour 1/2 cup
  • whole wheat flour, 1/2 cup , refer notes
  • Baking soda 1 teaspoon
  • Refined Oil 1/2 cup, refer notes
  • powdered white sugar 3/4 cup , refer notes
  • Vanilla extract 1 teaspoon
  • eggs 2 numbers
  • bananas, medium sized and well ripened 4 numbers

How to make Oats Sorghum Banana Bread: Healthy Treats

  1. Preheat the oven at 175 degree Celsius.
  2. Grease and line a loaf tin/ cake tin or muffin tray. Keep aside.
  3. In a large mixing bowl, sift the flours along with baking soda. Keep aside.
  4. In another large bowl, whisk together oil, vanilla, sugar and eggs until well combined.
  5. Peel and mash bananas with a fork until you get a coarse puree. Mix the banana puree into the egg mixture.
  6. Add the dry ingredients into the wet ingredients. Stir gently until there are no dry clumps of flour. Make sure not to overmix.
  7. Pour this mixture into the prepared loaf tin/ cake tin or muffin tray.
  8. Bake at 175 degree Celsius for 40 to 50 minutes, checking with a tester or dry spaghetti. [oven times may vary depending on the oven] If the tester comes out dry, then the loaf is baked and ready.
  9. Allow it to cool in the pan for 10 minutes, The carefully turn it out onto a cooling rack.
  10. Allow the banana bread to cool completely before slicing it up. This loaf yields about 10 thick slices of banana bread.
  11. Serve as a dessert for guests with a dollop of Crème fraîche or just as it is.
My Tip: To Prepare Oat Flour - grind instant oats to a fine powder in the mixer jar. If you do not want to use healthy grains, just 1.5 cups all purpose flour instead Any neutral oils like sunflower, rice bran etc can be used You could use any other sugars like raw cane sugar, coconut sugar etc in place of white sugar. But in this case, I would suggest you add lesser than the specified amount because sometimes they tend to be sweeter than white sugar. Adjust as per taste.
