Brinjal fry is very easy and tasty.

Ingredients Serving: 4

  1. Brinjal- 500 gms
  2. Onion-1
  3. Green chillies-3
  4. Salt- as per our taste
  5. Turmeric powder- little
  6. Chilli powder- 1 tsp
  7. Ginger garlic ( hand pounded fresh)- 1 spoon
  8. Vangi masala powder- 2 pinches( optional)

Instructions

  1. In a non stick pan, add oil and when hot, do the seasoning.
  2. Now add onions , chillies and saute for 5 min.
  3. Next add brinjal pieces and fry for 5 min.
  4. Now add salt, turmeric , chilli powder, ginger garlic and saute for few minutes and close with a lid.
  5. Check for every 5 minutes and saute gently.
  6. When cooked, sprinkle little vangi masala and coriander leaves and switch off the stove.
  7. Enjoy tasty brinjal fry.
