Ingredients to make Quinoa and veggies passion

  • Quinoa:- 1/4th cup
  • Lettuce leaves:- 2-3 leaves
  • Brocolli:-5-6 pieces small florets(pieces from one broccoli)
  • Red and yellow bell pepper:-1 tbsp each(Cut in big squares)
  • Baby corn:-5-6
  • Zuccinni:-1 (Cubed)
  • cucumber:-1 (Thin long slices preferable from potato grater)
  • Fresh cream:- 2 tbsp
  • olive Oil:- 1 tbsp
  • mustard Sauce:-1 tsp
  • honey:-1 tsp
  • Oregano:-1/2 tsp
  • Salt and pepper to taste
  • cabbage leaf:- 1 medium sized steamed (aldente)

How to make Quinoa and veggies passion

  1. Combine the fresh cream, olive oil, mustard sauce, honey, oregano, salt and pepper and keep aside. (Weight watchers can replace fresh cream with curd or yogurt.)
  2. Put 1 tsp olive oil in a pan, stir fry the vegetables for a couple of minutes till they are slightly cooked. The al dente of the vegetable is very important so don’t over cook. Mix half of the dressing with the vegetables and keep aside.
  3. Dry roast quinoa and put 1/2- 3/4th cup water and let it cook on a low flame with the pan covered. Stir it occasionally as it has a tendency to stick together. You will find that the grains have puffed a bit. Once done keep it aside.
  4. For assembling:- Take a cabbage leaf in bowl and put the cucumber in a circle position and close the end with a toothpick. Now put some quinoa in a thick layer and top it with the remaining dressing and finally top it with the vegetables.
  5. Garnish it with some lettuce leaves and serve.

My Tip:

If you are using yogurt then do not use honey. If quinoa is not available you can use broken wheat (dalia) as well.
