Pineapple Cake with Mango and Almond glaze

Ingredients to make Pineapple Cake with Mango and Almond glaze

  • 1 1/2 cups all purpose flour
  • 1/2 cup butter
  • 3/4 cup sugar
  • 4 tbsp curd + 1 tbsp water
  • 1 tbsp vinegar
  • 1/2 tsp baking soda
  • 2 tsp pineapple essence
  • 1/4 cup pineapple juice
  • 4 tbsp mango jam
  • Grated almond powder for dusting
  • 1 tsp baking powder

How to make Pineapple Cake with Mango and Almond glaze

  1. Sift together flour and baking powder. Cream together butter/oil with sugar using an electric blender.
  2. Whisk the curd with a tbsp of water till you get a smooth mixture. Add in vinegar followed by baking soda. This mixture will start bubbling. So as fast as possible combine the flour with sugar and butter mixture.
  3. Add in 1/2 a cup of water is the mixture is too thick. Now add in the bubbling curd and with a spatula cut and fold in the batter. Try incorporate as much air as possible.
  4. Don't over mix, add in the pineapple essence and bake in a preheated oven at 180 degree centigrade for 35 to 40 minutes. Do the toothpick test to check.
  5. Place on a wire rack to cool. Place in a plate after cooling and drizzle pineapple juice. (Use fresh juice for best taste)
  6. Dilute the mango jam and spread on the cake. Finally sprinkle grated almonds.
My Tip: If you have a pineapple then add in chopped bits just before transferring the batter in the cake tin.
