Balushahi

Ingredients to make Balushahi

  • Maida 1 cup
  • Oil 3 tablespoon
  • Baking soda - 1/4 teaspoon
  • Water as required for the dough
  • Sugar 1 cup
  • Water 1/4 cup for the sugar syrup
  • 1 tsp Cardamom powder
  • Oil for frying
  • Few sliced almonds

How to make Balushahi

  1. Mix the maida and baking soda nicely. Add 3 tablespoon of oil and again mix it well. Now make a dough with very little water till its just combined. Allow the dough to rest covered for half an hour.
  2. Make the sugar syrup by boiling sugar and water till you achieve one thread consistency. Then add in the cardamom powder.
  3. Make 8 balls with the dough. They will have rough edges which will help in soaking the sugar syrup easily.
  4. Now drop all the balushahi balls into hot oil. Keep the flame low. This will allow the balushahis to puff up nicely.
  5. Fry the balushahis till they turn slightly golden. Then transfer these balushahis immediately into the hot sugar syrup.
  6. Let them soak in the syrup for a few minutes, then take them out of the sugar syrup. You may garnish them will sliced almonds.
