ABOUT Brinjal Roll RECIPE

I have made this new dish of mine. It has the stuffing of minced chicken and cheese with some Italian flavours. Delicious and tasty, can be served as astarter.

Ingredients Serving: 5

  1. Brinjal- 1 nos (big size)
  2. Minced chicken- 1/2cup
  3. Chopped onion- 1 nos
  4. Chopped ginger garlic - 1 tbsp
  5. Mozzarella cheese- 1cup
  6. Bread crumbs- 1 cup
  7. Egg - 1 no
  8. Oregano- 1 tsp
  9. Chilly flakes- 1 tsp
  10. salt as per taste
  11. Sugar - 1/4 tsp
  12. Crushed pepper - 1 tsp
  13. olive oil - 1 tbsp

Instructions

  1. Cut the brinjal in thin longitudinal way. Rub some salt and very little sugar over it and keep it side.
  2. Warm up some Olive oil in pan and put the chopped ginger garlic, saute for 2mins .
  3. Add chopped onion to this, fry till the onion turns golden, then add the chicken into this. Cook this in high flame.
  4. Add all the spices and salt . Cook for for 5 minutes. Switch off the gas.
  5. Take the brinjal slice and grill it on a non stick pan with very little oil. Then put it on a maida dusted broad .
  6. Place some grated cheese on one side of the slightly grilled brinjal slice, then put cooked minced chicken and then roll the slice to the other end.
  7. Repeat this with all the slices.
  8. Dip the brinjal roll into beaten egg and then over the breadcrumbs.
  9. Bake these roll in a preheated oven at 230degrees for 10 minutes.
  10. Serve with salad and mayonnaise or any other dip.
