Chop off the ends and slice all the Bittergourds into a very thin circular discs. Using the seeds is optional.
Wash properly and Microwave it for 10 minutes with 3 tbsp water, stirring in between.
Heat oil in a pan. add hing, mustard seeds and cumin seeds. let them splutter.
Now add fennel seeds, onion seeds and sesame seeds. let them splutter.
Now add turmeric, coriander and red chili powder. Immediately add softened bitter gourd. fry for 2 minutes.
Now add tamarind pulp, jaggery and salt. cook for 5 minutes. turn off the flame.
Now heat 1 teaspoon oil in a nonstick tawa. spread the prepared bitterguord over tawa in single layer. keep the flame high.
Drizzle honey over the bittergourds and cook for 1 minute. keep a close eye on it as it should not burn but should just turn dark brown.
Turn the bittergourd rounds and brown them on other side too.
Switch off the flame and serve hot.
