ABOUT Stuffed baigan masala RECIPE

This is a great rajasthani recipe for small brinjals, cooked in rich onion and tomato masala.

Ingredients Serving: 8

  1. 250 gms small brinjals
  2. 6-7 tbsp oil
  3. 3/4 tsp turmeric powder
  4. 1/2 tsp cumin seeds powder
  5. 3/4 tsp coriander powder
  6. 1/2 tsp black pepper powder
  7. 11/2 tsp kashmiri red chilli powder
  8. 1/2 tsp garam masala
  9. Salt to taste
  10. fresh coriander leaves chopped
  11. 1/2 tsp cumin seeds2 green chilies chopped
  12. 10-12 curry leaves
  13. 1 LARGE ONION CHOPPED
  14. 2 medium tomatoes chopped
  15. 1 tbsp minced garlic
  16. 1 tbsp grated Ginger

Instructions

  1. create pockets in the brinjals by making 2 slits at 90 degree angle upto 3/4 of its depth.
  2. take 3 tbsp of oil in a bowl. add 2/3 of all the dry spices except garam masala, salt to taste. mix it well. it should have a paste like consistency.
  3. add 1 tbsp oil in a heated kadai. slide all the stuffed brinjals in the kadhai. cover the lid keep the flame on a low heat and cook till the brinjals are nicely cooked. stir at regular intervals. sprinkle some water to maintain the moisture
  4. after the brinjals are done, remove it from the pan. add 2-3 tbsp oil in the kadhai. add the cumin seeds and let it splutter. add the curry leaves, green chilies, minced garlic, grated ginger cook for around 30 secs, add the chopped onions.
  5. cook till the onion turns golden in colour. add the tomatoes. cook till the tomatoes turn tender. add salt to taste and the left over dry spices. mix it well. add the cooked brinjals mix it well.
  6. garnish with chopped coriander leaves. stuffed brinjal is ready to serve.
