This is a very healthy combination of frenchbeans with wheat flour and besan dumplings.This isa typical Gujrati recipe which you get even in most kathiyawadi restaurants.

Ingredients Serving: 4

  1. French beans-250 gms
  2. Wheatflour-2 tbsp
  3. Besan-1 tbsp
  4. Carom seeds-1/2 tsp
  5. Ginger-8 cloves
  6. Ginger-1 inch
  7. Green chilli-1
  8. Cumin seeds-1/2 tsp
  9. Asafoetida-1 pinch
  10. Turmeric-1 tsp
  11. Red chilli powder-1 tsp
  12. Coriander cumin powder-1 tsp
  13. Lemon juice-1 tsp
  14. Sugar-1 tsp(optional)
  15. Salt
  16. Coriander to garnish

Instructions

  1. Wash and cut the ends of french beans.Cut them into about 1 inch pieces.
  2. Knead a dough for dhokli.Take wheat flour,besan,salt,1/2 tsp turmeric,1/2 tsp chilli powder,1/2 tsp coriander powder and 1/4 tsp carom seeds.Add a tsp of oil and knead a dough with water.
  3. The dough should be nor too hard nor very soft.Make small balls and press to make coin like dumplings.
  4. Now take a cooker and add a tbsp of oil.
  5. Add cumin seeds and carom seeds.
  6. Add asafoetida and crushed ginger,garlic and chilli paste.
  7. Saute and then add the chopped beans.
  8. Add about 2 cups water and the spices like salt,turmeric,chilli powder, coriander cumin powder.
  9. Let the water boil and then add the dumplings one by one in boiling water.
  10. Add lemon juice and sugar.
  11. Close the lid of cooker and take 3 whistles.Then keep on slow gas for 5 minutes.
  12. Let the pressure release and your fansi dhokli is ready.Serve hot garnished with coriander with chapatis and rice.
