Channar Payesh / Paneer Kheer

Ingredients to make Channar Payesh / Paneer Kheer

  • Paneer/Cottage Cheese 200 grams
  • Full Cream Milk 1 liter
  • Sugar 8 – 10 tbsp
  • Cardamom Powder ½ tsp (optional)
  • Cashews 10 – 12 (split into half from the middle)
  • Raisins 20 or less

How to make Channar Payesh / Paneer Kheer

  1. Add milk to a thick bottom sauce pan and bring it to boil. Once it reaches the rolling boil, reduce the flame and leave it to reduce to half.
  2. Add sugar and stir till it dissolves. Using a long steel stirrer, stir in the milk occasionally.
  3. Meanwhile, cut the paneer into small cubes and set aside.
  4. When the milk has come down to half, turn off the flame and add in paneer cubes and dry fruits. Cover and leave till payesh reaches room temperature.
  5. Once it reaches the room temperature, refrigerate to cool before serving.
  6. Serve chilled.
My Tip: It is very important that you put the paneer in at the very end. If it is put in earlier it will become rubbery and inedible.
