Ingredients Serving: 6

  1. 1/2 cup almonds
  2. 1/2 walnuts or pistachios
  3. 1 cup plain biscuits such as Marie
  4. 1/2 cup cranberries
  5. zest of 1 orange
  6. 1 tsp vanilla extract
  7. 2 tblsp butter
  8. 200 grams chocolate
  9. Icing sugar to dust

Instructions

  1. Toast the almonds and walnuts or pistachio until fragrant. Let it cool and chop. Add into a bowl. Break the biscuits into this as well. Add the cranberries and then set the bowl aside.
  2. Over a double boiler melt the chocolate and add butter to it. Add in the orange zest as well as vanilla and mix well. Pour this chocolate onto the biscuit and nut mixture. Mix well.
  3. Let the mixture be cool to touch. Over a cling film roll out the chocolate mix and shape into a log. Wrap the cling film over it and then chill for atleast 2 hours in the freezer before serving.
  4. When you are ready to serve, dust with icing sugar and use a serrated knife to cut slices.
