Ingredients to make Baigan bhartha

  • 750 gm big brinjal (almost3 medium sized)
  • 5 medium sized onions
  • 4 big tomatoes
  • 3 tbsp oil
  • 18 chopped garlic, chopped
  • 1 tsp Cummin seeds
  • 2 tbsp chilli- ginger
  • 2 tsp red chilly powder
  • 1tsp turmeric powder
  • 3 tbsp coriander powder
  • 1/2 cup curd,beaten
  • Salt to taste
  • Few coriander leaves,green garlic finely chopped to garnish

How to make Baigan bhartha

  1. Wash thr baigan.Make two slots around its whole body.Punch garlic pods in each slit if possible. thereafter oil it.Now holding by its stem,burn on flame of gas moving all sides. Eventually it will shrink n become limp flaking out its skin.
  2. As done, remove it's skin carefully. Mash the eggplant.
  3. In pan,heat oil. Crackle Cummin seeds and saute chopped garlic.
  4. Now saute onion till translucent and bit limp.
  5. Add tomatoes, mix till gets mashed.
  6. Add all paste and Masalas.mix well
  7. Add mashed egg plant. Cook till it smells.
  8. Before serving, mix in the curd and cook for one min not letting over heating avoiding cuddling of curds.
  9. Serve hot with coriander leaves, green garlic sprinkled on top.
