About Harira Recipe

This traditional Moroccon soup is a healthy and filling dish that has a mixture of many textures.


Ingredients to make Harira

  • 1 chicken breast, cut in halves
  • 2 medium sized onions, finely chopped
  • 750 grams tomatoes, pureed
  • 2 cups chick-peas, boiled and drained
  • 100 grams lentils
  • 100 grams raw rice, long grained
  • 1/4 teaspoon saffron threads, crumbled
  • 1 liter chicken broth
  • 1 liter water
  • Handful of fresh coriander, finely chopped

How to make Harira

  1. Take a heavy bottomed pan, simmer and cook the chicken in the broth and water for 20 minutes or till chicken is cooked through. Now place the chicken on a chopping board.
  2. Put in the following ingredients, tomato puree, saffron, onions, chick-peas, rice, and lentils together into the broth. Cover and let it simmer and cook for 30 minutes or till the lentils are soft and cooked.
  3. In the meanwhile, shred the chicken and throw away the skin and bones. Add this into the soup along with salt and pepper to taste.
  4. Garnish with coriander leaves and serve it hot!
