We all are familiar with fried idli. Also fried chirwa with papad and sev is a very popular evening snacks. So here is the fusion of two, in a very interesting manner it is a layered fried snacks...it is fried idli Poha parafit

Ingredients Serving: 2

  1. FOR IDLI:
  2. Sooji 1 cup
  3. Curry leaves 2
  4. Salt to taste
  5. Toor dal 1/2 tsp
  6. Oil for sauting
  7. Mustard seeds
  8. Dahi 1/2 cup
  9. Water as required to make batter
  10. Soda a pinch
  11. FOR POHA FRY MIX:
  12. Poha 1 cup
  13. Papad 1
  14. Sev handful
  15. Peanuts 10
  16. Curry leaves 1
  17. Salt to taste
  18. Pomegranate pearls for decoration
  19. Green chutney for decoration
  20. Coriander leaves for decoration

Instructions

  1. For making idli:
  2. Heat 1 tbsp oil in a pan
  3. Add mustard seed, Curry leaves and toor dal.
  4. Fry for 30 sec
  5. Now add the sooji.stir fry for 5 min.
  6. Add salt.
  7. Take out in a bowl and cool it.
  8. Now add curd and water to make idli batter.
  9. Just before steaming add pinch of soda.
  10. Steam until done.
  11. Then deep fry them.
  12. For poha:
  13. Deep fry the poha until floats on top of kadai.
  14. Fry the papad, peanuts and curry leaves.
  15. Add the sev, papad, peanuts and curry leaves in poha.
  16. LAYERING:
  17. First take short glasses.
  18. Place two fried idli at the bottom.
  19. Top with green chutney and anar dana.
  20. Now add the poha mix layer.
  21. Top with coriander leaves and anar dana.
  22. Serve immediately.
