Ingredients Serving: 4

  1. Grinding masala :
  2. Green chillies - 5
  3. Onion - 1 big, roughly chopped
  4. garlic cloves - 4
  5. Clove - 3
  6. Cinnamon stick - 1 small piece
  7. Star anise - 3
  8. Khus Khus - 1 tbsp
  9. Coriander leaves - a handful
  10. Pudina leaves - a handful
  11. Other Ingredients:
  12. Beetroot cubed - 2
  13. Carrot cubed - 3
  14. Potato cubed - 1
  15. Onion sliced - 2
  16. Bay leaf - 1
  17. Garam Masala
  18. Cashews - 6(optional)
  19. Tomato chopped - 1
  20. Basmati rice - 1 cup
  21. Hot Water - 2 cups
  22. Salt to taste
  23. Ghee - 1/2 cup

Instructions

  1. Shallow fry all the ingredients listed under grinding masala section except coriander leaves and pudina leaves. Cool the mixture. Add coriander leaves and pudina leaves and grind to a smooth paste.
  2. Take a pressure cooker. Heat it and add ghee. Saute onions, bay leaf and cashews. Then add vegetables and fry for 2 minutes. Add tomatoes.
  3. Now add rice soaked in water for 30 minutes and then drained.
  4. Add ground masala and garam masala. Fry for 5 minutes.
  5. Add salt and hot water 1 inch above the rice level. Close the lid and pressure cook for 3 whistles.
  6. Switch off the flame and let the cooker cool. Open the lid and mix well.
  7. Serve hot with raita.
