ABOUT Spinach Potato Mini Pies RECIPE

Winter calls for tasty bakes. Here is a beauty with loads of health benefits. Spinach and potatoe is a well known combination and gives a total rich taste with some cheese in form of a pie. Crunchy crust made of whole wheat flour and Desi ghee makes this pie a guilt free snack.

Ingredients Serving: 4

  1. For the pie crust :
  2. Whole wheat flour - 1 1/4 cup
  3. Desi ghee - 4 tbsp
  4. Chilled milk - 3/4 cup
  5. Salt to season
  6. For the filling :
  7. Spinach - 1 bunch
  8. Potato - 1
  9. Cottage cheese - 20 gms
  10. Plain processed cheese-20 gms
  11. Green chilies - 2 finely chopped
  12. Spice powders :
  13. Roasted red chili flakes - 1/2 tsp
  14. Oregano - 1/2 tsp
  15. Nutmeg powder - 1/4 tsp
  16. Pepper powder - 1/2 tsp
  17. Salt to taste

Instructions

  1. Make a crumble of the wheat flour adding salt and ghee.
  2. Add chilled milk gradually forming a dough. Cover and refrigerate.
  3. Meanwhile make the filling. Boil and mash the potato. Blanch spinach. In a bowl, combine mashed potato with the spices
  4. Add the blanched spinach to the potato mixture
  5. Add the crumbled cheeses and mix well
  6. Preheat oven to 180 °, Grease baking tray
  7. Divide dough into 2 equal balls. Roll into big rotis
  8. Cut into circles using round glass
  9. Fill each circle with 1.5 tbsp of the filling
  10. Apply water on the edges and cover with another such circle. Press with a fork around the circle to seal and place on baking tray
  11. Bake for around 35 minutes until golden brown basting with light butter twice in between.
  12. Serve hot with sauce or ketchup
