Chicken Stir fry with Vegetables

Ingredients to make Chicken Stir fry with Vegetables

  • 1/2 kg Boneless Chicken
  • 1 cup Broccoli, washed
  • 1 Red bell pepper, chopped
  • 1 tbsp light soy sauce
  • 1 tsp garlic, minced
  • 1 tsp lime juice
  • 1 egg
  • Corn flour as needed
  • Salt and pepper to taste
  • Oil as needed

How to make Chicken Stir fry with Vegetables

  1. Wash the chicken pieces thoroughly, rub some salt and lime all over the chicken pieces. Marinate for 30 mins.
  2. Heat oil in a shallow frying pan, beat egg in one bowl and place corn flour in another.
  3. Dip the chicken pieces in the egg then corn flour and fry till it becomes a light golden brown color. Drain over paper towels and keep aside.
  4. Heat a sauce pan and add 1 tbsp of oil, stir fry the broccoli, garlic and bell pepper for 2-3 mins.
  5. Add the chicken pieces and soy sauce, mix well to coat. Season with salt and pepper.
  6. Add some corn flour mixed with some water to this to thicken the gravy a bit.
  7. Cook for 5 more minutes.
  8. Transfer to a serving plate and enjoy!
