ABOUT Saijan Ki Phali Masala...(Drumstick masala) RECIPE

A simple side dish with tomatoes and onions. Called as saijan ki phali in urdu, it is most popular in India and Pakistan. It is also very healthy. Goes well with moong dal khichdi or even plain rice. Kasoori methi added to it renders this curry an amazing flavour. It is my way of making it. You can very well skip kasoori methi if desired.

Ingredients Serving: 5

  1. Drumsticks 7 (cut into 3 pieces each)
  2. Onions chopped 2
  3. Tomatoes chopped 2
  4. Asafoetida a pinch
  5. Red chilli powder 1 tbsp
  6. Turmeric 1/2 tsp
  7. Coriander leaves a handful
  8. Garam masala 1 tsp
  9. Cumin powder 1 tsp
  10. Kasoori methi 2 tbsp
  11. Oil 3 tbsp

Instructions

  1. In a cooking pot, heat oil and add asafoetida. After a few seconds, add the chopped onions.
  2. Saute them until light golden brown. Add the chopped tomatoes along with all the spices except garam masala.
  3. Cover and cook until the tomatoes are done for about 5 minutes.
  4. Now add the drumstick pieces and allow them to cook with some water added.
  5. Cover and cook for about 12 to 15 minutes. Also add kasoori methi. Cook until the oil starts separating and the masala coats the drumsticks well.
