Robust Macarons

Ingredients to make Robust Macarons

  • Egg white of 1 egg
  • Watermelon seed powder 30 gms
  • Castor sugar 15 gms
  • Icing sugar 40 gms
  • Vanilla essence 2 drops

How to make Robust Macarons

  1. Grind watermelon seeds with icing sugar, vanilla essence to a fine powder and sieve it.
  2. Beat egg white till foamy.
  3. Add castor sugar and beat well till stiff peaks begin forming.
  4. In 2 or 3 additions add watermelon seed mixture.
  5. Divide in six parts and with a spoon shape them in uneven balls. Arrange them in a baking dish, lined with baking sheet/parchment.
  6. Bake macaroons for 15 minutes or more in a preheated oven at 160 degree centigrade.
  7. Bake till it is no longer sticky. Cool on wire rack.
