Egg-less Butter-less Choco Muffins

Ingredients to make Egg-less Butter-less Choco Muffins

  • Whole Wheat flour - 3/4 cup
  • Coco Powder - 2 1/2 tsp
  • Sugar - 1/2 cup
  • Baking Soda - 1/2 tsp
  • Oil - 1/4 cup
  • Cold Water - 3/4 cup
  • Orange Zest - 1 tsp (Optional)
  • Lemon juice - 1 tsp
  • Vanilla Essence - 1 tsp

How to make Egg-less Butter-less Choco Muffins

  1. Sieve the whole wheat flour, coco powder and baking soda together to ensure even mixing. Add the sugar and salt to the sieved flour. Mix well and keep this dry ingredients aside.
  2. In another bowl mix the oil, cold water( water from fridge) and vanilla together. We will add the lemon juice and orange zest at the end. Now mix the wet ingredients with the dry ingredients and fold until the sugar mixes well.
  3. Now add the reserved lemon juice and orange zest and fold gently to mix it evenly.
  4. Spoon the batter to the muffin liners in the baking tray. Fill only 3/4 . I have used double liners for each muffin for better look. Tap the muffin tray to remove the trapped air.
  5. Now keep the baking muffin tray in the combination microwave with convection mode at 180 degree celsius for 20-25 minutes. Keep a watch after 20 minutes. It took 22 minutes for my muffins .
  6. If the tooth pick is sticky, bake for 5 more minutes. Once done, carefully take out the muffins and keep them to cool on a wire rack.
  7. Enjoy the chocolaty and moist choco muffins with your loved ones. The above measurements make 8 muffins.
My Tip: Addition of Orange zest is optional, but its addition surely makes the muffins flavorful.

hi I by mistake mixed the oil,water,essence n lemon juice. later on i mixed in the dry ingredients. hope it comes out well.
