The Quintessential Kerala Vegetable Stew

Ingredients to make The Quintessential Kerala Vegetable Stew

  • 2 tbsp Coconut oil/refined oil
  • 4 Cardamom pods whole
  • 5 Cloves
  • 2 sticks Cinnamon broken
  • 2 Onions thinly sliced
  • 5 Chillis sliced long
  • 1 tbsp freshly ground Ginger
  • 1 tbsp freshly ground Garlic
  • 2 Potatoes diced
  • 3 Carrots diced
  • 1/2 cup Peas
  • 2 cups Coconut milk/water
  • 1/2 cup Coconut cream (first press)
  • *1/2 tsp Garam masala

How to make The Quintessential Kerala Vegetable Stew

  1. We Malayalee’s call wok as ‘Chenna Chatti’ or ‘Chinese Pot’ and it is extensively used in our day to day cooking.
  2. Add oil to wok and drop in whole spice. Saute till they start to release their flavour.
  3. Add in sliced onions and chilies. Fry till onions turn transparent. Now add ginger-garlic paste. Once the raw small of ginger-garlic paste wafts, add in potatoes, carrots, peas and other vegetables. Stir to get completely coated with spices
  4. Add in coconut milk/water. Cook covered till vegetables are done.
  5. Cook on low by adding coconut cream for 2 minutes without bringing it to boil.
  6. Serve by sprinkling garam masala.
My Tip: Fresh coconut milk makes alll the difference. In it's absence and of course for convenience, the tetrapack version works just as well ;-)
