No-Bake Chocolate-Biscuit Mini Cakes

Ingredients to make No-Bake Chocolate-Biscuit Mini Cakes

  • 200 gms. Dark Chocolate
  • 1 cup Whipped Cream
  • 1 tbsp. Butter room temperature
  • ½ tbsp. Vanilla essence
  • 6 Digestive Biscuits I used Britannia Nutri Choice Digestive Biscuits
  • 1 tbsp. powdered biscuit /chocolate jimmies/color sprinklers

How to make No-Bake Chocolate-Biscuit Mini Cakes

  1. Using double boiler method or in microwave melt in chocolate and set aside.
  2. Take whipped cream, add vanilla essence and butter. Combine and add melted dark chocolate. Whisk until smooth and glossy. This is our creamy chocolate layer.
  3. Start by greasing ramekins with butter. Alternatively you can use parchment paper too. If you are using parchment paper, just place it in a way that it hangs over the sides. Start to layer.
  4. First chocolate then top it with biscuit, then chocolate, biscuit. Press lightly with your hand and then again chocolate.
  5. Tape the ramekin gently and leave this to set for 4-5 hours in fridge.
  6. Before serving take these moulds out of fridge and run a sharp knife around the ramekin and gently demould.
  7. Sprinkle powdered biscuit or chocolate shavings on top before serving.
