Ingredients to make Veggie Rich Protein Balls

  • 1/2 cup dried chickpeas, soaked overnight
  • 2 cups kale, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 red onion, chopped
  • 1/2 cup froze peas
  • 1/2 cup froze corn
  • 1/2 cup oats
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 3/4 tsp salt
  • 1/4 tsp black pepper powder

How to make Veggie Rich Protein Balls

  1. Preheat oven to 375'F.
  2. Heat a nonstick pan with 1/3 cup water. Add in bell pepper, kale and onion. Sautee for 10 minutes.
  3. Add soaked chickpeas, sauteed veggies, peas, corn and spices into food processor and blend until well mixed.
  4. Next add oats and blend again.
  5. Now prepare tennis size balls out of the mixture.
  6. Place on a baking sheet and bake for 30-35 minutes OR optionally you can deep fry the balls in hot oil.
