Ingredients to make Mumbai Mast tawa pulao

  • Uncooked rice- 2 cups (soak in water for 45 mints -1 hr)
  • Coriander leaves-one handful
  • Pao bhaji masala 1-2 tbsp
  • Chili powder - 1tsp
  • Turmeric powder-1-2 tsp
  • Garlic paste-1tsp
  • Ginger paste -1/2tsp
  • Potato - boiled and chopped
  • Carrot - blanched and chopped
  • Chopped capsicum -1
  • Chopped tomato-1 big
  • Chopped onion - 1big
  • Oil 3-4tbsp
  • Salt -as required
  • Lemon juice 1-2tbsp

How to make Mumbai Mast tawa pulao

  1. Take a handi, add water, salt and 1tbsp oil, bring to boil, when water starts boiling add soaked rice. Keep cooking until rice is cooked well, rice should not be over cooked.Over cooked rice may spoil the texture of pulao.
  2. After rice is done, keep it in the strainer and drain water properly.Keep aside.Let the rice cool.
  3. Now take a tawa or pan or kadhai, add oil then add chopped onion, .saute for 1-2mints.Add ginger garlic paste, stirring for 1-2 mints..Add chopped tomato ,capsicum keep stirring for 3-4 mints, now add boiled potato, blanched carrots, salt, turmeric, chili ,cumin and coriander powder and pao bhaji masala .Mix it well.
  4. Now add cooked rice, sprinkle some salt and sugar ,mix all masalas with rice gently.Rice grain should not break..
  5. Now add coriander leaves and lemon juice, mix well with rice.
  6. Lip smacking tawa pulao is ready to serve. Serve tawa pulao with raita ,pickle or green salad.
  7. You can make tawa pulao with leftover rice, it will be time saving option.
