White Matar ki Chat

Ingredients to make White Matar ki Chat

  • White matar (light brown in color, they look almost like chick peas; available in Indian grocery stores)
  • Salt to taste + 1 tbsp
  • Red chilly powder 1 tbsp
  • Coriander leaves, finely chopped 1 cup
  • Green chilly, finely chopped 1 tbsp
  • Coriander seeds 2 tbsp
  • Hing a pinch
  • Clove 4 no
  • Roasted cumin powder 1 tbsp
  • Lemon 4 nos
  • Ghee ( clarified butter) 2 tbsp
  • Cornflour 1 tbsp
  • Cumin 2 tbsp

How to make White Matar ki Chat

  1. Wash and soak matra in three cups of water overnight
  2. Dry roast the cumin seeds ,coriander seeds,heeng and clove separately, until they are brown and you can smell their aroma. Let them cool and grind to powder consistency.
  3. Put the matra in a pressure cooker with 2½ cups of water. Add the 1 tbsp salt Cook on medium high heat.
  4. When the pressure cooker starts to steam, turn the heat down to medium and cook eight to nine minutes more.
  5. Turn off the heat and wait until steam has stopped before opening the pressure cooker. Matra should be soft and tender.
  6. Now add cornflour in matar and make the tikkies with the help of your palms.
  7. Now arrange the tikki in a serving plate, ,sprinkle the roasted cumin powder,red chilli powder ,cumin-coriander and clove powder ,chopped chilli,chopped coriander,and lemon juice .
My Tip: For better taste we can also add some green chutney, sonth chutney, curd and chopped onion.
