Ingredients Serving: 4

  1. 250 gms Garadu (Garadu is a type of yam. It looks somewhat like sweet potato (ratalu) in appearance).
  2. 2 tbsp lemon juice
  3. Oil for deep-frying
  4. Salt to taste
  5. Garadu/Jiralu masala homemade :
  6. 2 teaspoons roasted cumin powder,
  7. 1½ teaspoons dry ginger powder (soonth)
  8. ½ teaspoon red chilli powder
  9. ½ teaspoon rock salt (sendha namak)
  10. ½ teaspoon black salt (kala namak)
  11. ¼ teaspoons turmeric powder
  12. one pinch of asafoetida

Instructions

  1. Mix the ingredients under Garadu/Jiralu masala to make it.
  2. Trim off the ends of garadu taking off the narrow tapering ends and use only the middle section. Grease a knife and peel it.
  3. Cut garadu into large chunks. Boil it in cooker upto 2 whistles or boil till just done.
  4. To check, insert a knife into the thickest part of the garadu after six to seven minutes. If it goes in easily the garadu is cooked. Remove from heat and drain into a colander.
  5. Allow to cool completely. Chop into small bite sized squares.
  6. Heat sufficient oil in a kadai on high heat. Deep fry the garadu pieces till they are golden coloured and crisp. Drain and place on an absorbent paper.
  7. Sprinkle jiralu masala(homemade) powder, salt, lemon juice. Serve immediately.
