One pot Beans and Corn Soup

Ingredients to make One pot Beans and Corn Soup

  • 1 onion chopped
  • 7 to 8 crushed garlic cloves
  • 1/2 cup sweet corn
  • 1/2 carrot chopped
  • 1/2 Green capsicum
  • 1/4 cup french beans
  • 1/2 tsp mixed herb
  • 1 tsp Oregano
  • 8 to 10 basil leaves
  • 1 cup tomato puree
  • 1 cup boiled red kidney beans
  • 2 and 1/2 cup Vegetables stocks
  • salt to taste
  • 2 tsp oil

How to make One pot Beans and Corn Soup

  1. Heat oil in a pan add crushed garlic wait for 30 seconds add chopped onion and start to cook
  2. When onion translucent add all chopped Vegetables in it and stir it
  3. Now add Oregano,mixed herb and tore Basil leaves,salt and stir for 2 minutes on low to medium flame
  4. Now add tomato puree and kidney beans and vegetables stock in it and mix well,Cover the pan and cook for 10 to 15 minutes on low flame,stir in between for 1 or 2 times.
  5. In between take 1/4 cup of soup and Blend it and make puree consistency
  6. Finally add black pepper and soup puree in it when soup is ready,it gives the soup a rich texture and perfect consistency.
  7. Now healthy,easy and super comfort and energetic soup is ready to serve
  8. Serve hot with bread slice,garlic bread or pasta.
