Ingredients to make RANGA ALOO DOODH PULI / COCONUT STUFF WHOLE WHEAT DUMPLINGS

  • Milk - 1 litter
  • Red potato - 6 no
  • Whole wheat flour - 1 cup
  • Grated coconut - 1 cup
  • Grated khoya - 1/2 cup
  • Date palm jaggery - 1 1/2 cup
  • ghee - 1tablespoons
  • A pinch of salt

How to make RANGA ALOO DOODH PULI / COCONUT STUFF WHOLE WHEAT DUMPLINGS

  1. Boil the milk in a deep bottom pan .
  2. Boil the red potato in a pressure cooker for 2 whistle and then mashed the potato .
  3. Meanwhile knead the potato , wheat and salt and ghee to make a soft dough .
  4. Heat pan on low medium flame add grated coconut and dry roast for 8 minutes then add 1/2 cup of jaggery and mix well .
  5. Stir continuously until the mixture attains a consistency thick add khoya and thick enough to be made into balls that can be stuffed into a shell - to be made in the next step .
  6. Make small balls from the dough and after dusting it with the flour , make them into flat dish that can be converted into shells to hold the stuffing .
  7. Make the dumplings by placing the stuffing inside the shell and sealing it .
  8. Places the dumplings one by one very gently into the pan of boiling milk , do not stir let them simmer for about 5 minutes .
  9. Add the crushed jaggery to the dumplings in the boiling milk and stir gently and simmer for another 5 minutes .
  10. Remove from the heat and allow the pan of puli to cool down to room temperature before serving ...
