About Chicken Parmigiana Meatloaf Recipe

This meatloaf is a bit different than the regular meatloaf as there is a good healthy dose of marinara sauce mixed into the meat, with a spread on top of ooey gooey mozzarella cheese! It’s a good thing.

Chicken Parmigiana Meatloaf

Ingredients to make Chicken Parmigiana Meatloaf

  • 450 gms ground chicken
  • 2-3 garlic cloves, finely chopped
  • 1 medium sized onion, finely chopped
  • 2 eggs
  • 1 cup panko bread crumbs
  • 1 cup marinara sauce
  • ½ cup each of grated parmesan and asiago cheeses
  • 1 cup shredded mozzarella
  • Fresh parsley, a handful, chopped
  • Salt and pepper to garnish

How to make Chicken Parmigiana Meatloaf

  1. Mix everything together with 1/2 cup sauce and 1/4 cup Parmesan and Asiago cheeses and 1/2 cup mozzarella cheese.
  2. The rest of the sauce and cheeses will be required to top off the meatloaf.
  3. Bake at 190 degree celsius in the oven for about 40 minutes.
  4. After this time, take out the meatloaf, spread the leftover sauce and cheeses on top and bake for another 20 minutes.
  5. Garnish with fresh parsley and enjoy!
