Mexican Rice

Ingredients to make Mexican Rice

  • 2 cups boiled rice
  • Oil for cooking
  • 3 cloves garlic minced
  • 3 onions thinly sliced
  • 1 red bell pepper, thinly chopped
  • 1 yellow bell pepper, thinly chopped
  • 1 green capsicum, thinly chopped
  • 1/2 cup sweet corn
  • 2 tbsp red chilli flakes
  • 2 tbsp black pepper
  • Salt
  • 1/2 cup ketchup

How to make Mexican Rice

  1. Heat oil in a pan. Add garlic and onions.
  2. Saute for a while. Then add bell peppers, capsicum and corn.
  3. Mix properly till the vegetables become tender. Then add chilli flakes, black pepper and ketchup.
  4. After cooking for a while, add salt and rice.
  5. Mix properly and serve it hot.
