Ingredients to make Ras Malai(Grandma Recipe)

  • For Chena,1 litre cow milk
  • 1/4 cup curd water or chena water
  • 1 tbsp maida
  • For Milk Ras,1 and 1/2 litre full fat milk
  • 2 cup sugar (add more or less according to taste)
  • 1/2 tsp green cardamom powder
  • 1/4 cup mixed chopped dry fruits
  • For Chashny,1 and 1/2 cup sugar
  • 1 litre water,extra for sprinkle over it
  • 1 tbsp maida for sptinkle over it

How to make Ras Malai(Grandma Recipe)

  1. FOR MAKING CHENA,BOIL COW MILK IN A DEEP VESSEL,ADD GRADUALLY CHENA OR CURD WATER IN IT
  2. WHEN CURDLES SEENS,STRAIN IN A MUSLIN CLOTH
  3. NOW WASH THIS WITH CLEAN DRINKING WATER 2 TO 3 TIMES
  4. HANG TO REMOVE WATER,WHEN DONE KEEP IN FLAT SURFACE AND KEEP HEAVY LOAD OVER THIS FOR 3 TO 4 HOURS
  5. FOR MAKING MILK RAS,BOIL MILK IN A DEEP PAN
  6. BOIL TILL SLIGHTLY THICK NOT MUCH
  7. ADD SUGAR AND MIX WELL
  8. WHEN SUGAR MELT AND COOK ADD GREEN CARDAMOM POWDER
  9. MIX NICELY
  10. NOW TRANSFER IN A BOWL
  11. ADD CHOPPED MIX DRY FRUITS MIX AND KEEP IN FRIDGE TO COOL
  12. NOW TAKE WATER REMOVE CHENA IN A PLATE
  13. ADD 1 TSP MAIDA IN IT
  14. NOW MIX AND RUB NICELY WITH PALM FOR 3 TO 4 MINUTES
  15. NOW MAKE FLAT DISC OR ROUND SHAPE BALLS FOR THIS MIXTURE
  16. FOR MAKING CHASHNY,TAKE WATER IN A DEEP PAN
  17. ADD SUGAR IN THIS
  18. MIX AND MAKE CHASHNY FOR THIS ON HIGH FLAME
  19. WHEN SUGAR COMPLETELY MELT ADD ONE BY ONE CHENA DISC IN THIS CHASHNY CAREFULLY
  20. COVER IT AND COOK THIS ON HIGH FLAME FOR 12 TO15 MINUTES,MAKE SURE TEMRATURE CONTINUE HIGH
  21. USEFUL TIPS, SPRINKLE SOME MAIDA FOR 2 TO 3 TIMES IN IT TO INCREASE THE TEMPRATURE OF CHASHNY
  22. POUR FEW DROPS OF WATER FOR 2 TO 3 TIMES TO PREVENT THE CHASHNY THICK
  23. WHEN CHENA DISC COOK SWITCH OF GAS AND LEFT IT IN THIS CHASHNY FOR 2 MINUTES
  24. NOW KEEP OUT THE DISC FROM CHASHNY AND LEFT TO COOL
  25. WHEN DISC COOL,TAKE OUT CHILLED MILK RAS FROM FRIDGE AND ADD COOL CHENA DISC IN THIS
