Eggless Pineapple Cake

Ingredients to make Eggless Pineapple Cake

  • 2 cup Maida
  • 1/2 cup Oil
  • 1/2 tsp Baking soda
  • 1 tsp Baking powder
  • 2 tsp White vinegar
  • 1/2 tsp Pineapple essence
  • 4 tbsp Curd
  • 1/2 cup water
  • 1 cup sugar (powder it)
  • For the cream:
  • Pineapple pieces or pineapple jam
  • Amul cream 250 ml
  • Powdered sugar

How to make Eggless Pineapple Cake

  1. Sieve twice maida, baking powder and soda.
  2. Mix all the ingredients in a mixing bowl and form a batter.
  3. If batter is thick add more water to form a slight flowing consistency.
  4. Grease the baking tin with oil
  5. Pour all the batter. Preheat and bake at 200°C for 35-40 minutes. Cool the cake at least 5 hours or best over night.
  6. For cream:
  7. Take amul cream 200 ml. Keep in fridge whole night. Next morning cut the pack separate cream and water. Whip it to stiff peaks add powdered sugar and pineapple essence.
  8. Cut cake in two halves apply cream in the middle along with pineapple pieces or pineapple jam.
  9. Serve chilled or at room temperature.
