About Dhabha chicken. Recipe

It is dhabha style chicken, to be served with some tandoori roti on the side.

Dhabha chicken.

Ingredients to make Dhabha chicken.

  • chicken, washed 1/2 kg
  • salt to taste
  • curd 1/2 cup
  • Red chili powder 1 1/2 tsp
  • ghee 1tbsp
  • ginger and garlic paste 2tsp
  • Brown cardamom 1
  • Green cardamom 2
  • bay leaf 1
  • Dry red chili 2
  • cinnamon sticks 1
  • onion chopped 2
  • cumin powder 1tsp
  • Garam masala 1 tsp
  • Red chili powder 1 tsp
  • turmeric powder 1/2 tsp
  • tomatoes, chopped 3
  • tomato puree 2 tbsp
  • fenugreek leaves 1tsp
  • green chillies, chopped 2
  • Green coriander leaves 1 tbsp

How to make Dhabha chicken.

  1. In a bowl take chicken, salt, curd,red chili powder 1/2 tsp and marinate for 20 min.
  2. In a wok ,heat ghee, garlic and ginger paste,brown cardamom, Green cardamom, bay leaf, dry red chili, cinnamon sticks and cook for couple of seconds.
  3. Add onion and cook till it turns golden brown.
  4. Add marinated chicken in it and cook for 10 min.
  5. Add cumin powder, garam masala,red chili powder, turmeric powder,tomato puree,tomatoes and water 1/4 cup and cook for 8 -10 min in medium flame.
  6. Add garam masala 1/4tsp,fenugreek leaves, green chillies, green coriander and water 1 cup and cook for 30-35 min in low flame.
  7. Serve in platter and garnish with green coriander leaves 1tsp and fenugreek leaves a pinch.
