Garlic Mixture

Ingredients to make Garlic Mixture

  • Besan/chickpea flour – 1 cup
  • garlic paste - 1 table spoon
  • garlic - 7 (fried in oil)
  • salt – 3/4 tsp
  • peanuts - 1/4 cup
  • Chili powder – 1 tsp
  • water – 3/4
  • oil – for deep frying

How to make Garlic Mixture

  1. Mix besan flour with red chilli,salt and garlic paste with enough water to knead into a smooth dough.
  2. You should be able to put the batter using a sev machine.
  3. Use a sev machine with round holes(the one used for deep frying).
  4. Now hold the machine about 6-8 inches above the hot oil in your left hand.
  5. Using the right hand, take a machine full of batter and pour it on top of the boondi maker.
  6. Keep the sev maker still and use the right hand machine to press down the batter through the holes in a circular motion(like you are making a dosa).
  7. Fry till the sev are golden brown. Drain and keep aside.
  8. In the remaining oil, add the peanuts and fry till the raw smell goes away. Keep aside.
  9. Combine all the ingredients: sev,salt,chilli powder and fried garlic pieces and peanuts and mix well.

My Tip:

If you want, you can add fried corn, chips etc to the mixture based on your choice
