About Lemon & strawberry macarons Recipe

Macarons are famous french cookies, made with almond meal/flour. I have made 2 varities of the same by infusing tue flavours of lemon and strawberries into them.

Ingredients to make Lemon & strawberry macarons

  • almond flour - 100 gm
  • Icing sugar - 180 gm
  • egg whites (room temperature) - 100 gm
  • cream of tartar - 1/4 th tsp (use salt if not available)
  • Castor sugar - 40 gm
  • Vanilla extract - 1/4 th tsp
  • lemon extract - 1/2 tsp
  • Strawberry coulis - 1 tsp
  • Yellow gel colour
  • Pink gel colour
  • Butter cream filling:
  • butter - 1/2 cup
  • Icing sugar - 2 cups
  • lemon extract - 1/4 th tsp
  • Strawberry coulis - 1/4 th tsp
  • Green gel Colour
  • Pink gel colour

How to make Lemon & strawberry macarons

  1. Sift the almonds flour and icing sugar together. Keep aside.Now whisk the egg whites, add the cream of tartar and whisk to form a foam.
  2. Slowly add the Castor sugar into the above while whisking till it forms stiff peaks like meringue.
  3. Now fold the almond flour+ icing sugar mixture in 3 parts into the egg white mixture. Add the vanilla extract.
  4. Divide it into 2 parts, mix lemon extract along with yellow colour into one part, mix strawberry coulis and pink colour to the other part.
  5. Pour the mixtures into piping bags. Line a baking tray with butter paper, pipe dollops of respective mixtures onto it. Tap the tray to remove any air bubbles. Let it sit for 1 hour till there is an outer coat formed.
  6. Preheat the oven to 160 degree Celsius and bake these for 14-16 minutes.
  7. To make the butter cream filling, Whisk the butter till it is fluffy.Then add the icing sugar and whisk till it is creamy.
  8. Divide this into 2 parts, add green colour and lending extract to one where as, add strawberry coulis and pink food colour to the other. Mix well.
  9. Pour this into a piping bags and pipe green coloured one a little on one lemon macaron and cover with the other. Pipe pink coloured one on one strawberry macarons, cover with the other.
