Cornmeal Upma

Ingredients to make Cornmeal Upma

  • Maize flour 1/2 cup
  • Oil 3 tsp
  • Asafoetida 1 pinch
  • Mustard seeds 1/4 tsp
  • Cumin seeds 1/4 tsp
  • Curry leaves 5-6
  • Chopped ginger 1/2 tsp
  • Chopped green chilli 1
  • Chopped onion 1
  • 1/2 cup of chopped vegetables (carrot, cauliflower, peas)
  • Salt to taste
  • Chopped coriander 1 tbsp
  • Lemon juice 1 tbsp
  • Roasted peanuts 1 tbsp

How to make Cornmeal Upma

  1. Heat a pan add 1 tsp oil and cornmeal. Roast the cornmeal and take it out in a bowl.
  2. In the same pan, add 2 tsp of oil, asafoetida, mustard seeds, cumin seeds, curry leaves, ginger, green chilli, onion and saute for 2 mins. Now add the mix of vegetables and a little bit of water. Cover the pan and cook for 2 mins.
  3. Open the lid, add 1 cup of water and salt. Let it boil, add the cornmeal and stir well.
  4. Then add coriander leaves, crushed roasted peanuts and lime juice.
  5. Serve it hot.
My Tip: Don't overcook the vegetables.
