Edamame spaghetti with avocado pesto

Ingredients to make Edamame spaghetti with avocado pesto

  • 1 Pack Edamame spaghetti
  • 1 avocado
  • 1 Small bunch small baby spinach
  • 1/4 Cup Mixed vegetables
  • 3-4 Nos Cherry tomatoes
  • 1/4 Bunch cilantro leaves
  • 1 Tbsp garlic paste
  • 1 Tbsp olive oil
  • 1 Tbsp lime juice
  • Pinch salt
  • 1 Tbsp Green chilli sauce
  • 1 Tbsp Pine nuts
  • Few basil leaves

How to make Edamame spaghetti with avocado pesto

  1. Cook the edamame spaghetti in a pot of hot water with a tsp of olive oil , as per instructions on the pack . Pinch of salt maybe added .
  2. Edamame spaghetti usually cooks faster so keep an eye as you don't want them soggy . Drain and keep aside .
  3. To make pesto, add avocado sliced , pine nuts , cilantro leaves , some baby spinach leaves , some basil leaves , garlic and lime juice , blend to paste . Keep aside .
  4. In a pan add olive oil , toss veggies , cherry tomatoes , some chopped spinach leaves , add the cooked edamame spaghetti, add the pesto , mix well . Add green chilli paste . Add salt as required .
  5. You can serve this with some crumbled cheese or toasted tofu . Enjoy !
