Egg and soya nuggets in a spicy gravy.

Egg Soya Curry

Ingredients to make Egg Soya Curry

  • egg - 4 boiled and deshelled
  • 2 potatoes, cut to cubes
  • 1 cup of soya nuggets (kept in boiling water for 5 minutes)
  • paste of 1 onion, 1 tsp of each ginger and garlic paste
  • Salt as per taste, chilli powder 1tsp
  • 1/2tsp turmeric powder, 1/2 tsp jeera powder
  • 1/2 tsp Garam masala powder
  • mustard oil 3 tbsp
  • tomato puree 1/2 cup

How to make Egg Soya Curry

  1. Put oil in a pan, fry the eggs and keep aside.
  2. In the same oil, add the potatoes and fry them.
  3. Add onion, ginger-garlic paste and saute nicely.
  4. Add salt, sugar, chillies, tomato puree, turmeric and all the other masalas and saute on low flame.
  5. Add the nuggets and 3 cups of water.
  6. Add the eggs. Let the gravy thicken, add garam masalas and a spoonful of ghee.
  7. Serve with rice or roti.
