Veg Pudina Rice

Ingredients to make Veg Pudina Rice

  • 2 cups Basmati rice soaked in water for 15 minutes
  • 1 cup vegetables (Carrots, beans, potato, cauliflower and peas)
  • 1/2 cup pudina
  • Few dhania leaves ground coarsely
  • 1/2 inch Ginger piece
  • 2 cloves Garlic
  • 2 green Chilli
  • Bay leaves 1 or 2
  • Shah jeera 1 to 2 tsp
  • Cinnamon piece as per choice
  • Cloves a few
  • Big Elaichi 1
  • 1/4 tsp Turmeric powder
  • 1 medium sized onion cut long pieces
  • 2 tbsp Oil
  • 1 tsp Ghee
  • Few paneer pieces fried for garnishing

How to make Veg Pudina Rice

  1. Take heavy bottomed pan, add oil.
  2. Add khada masala, onions and keep frying. Add vegetables and turmeric powder.
  3. Add the coarse paste of pudina dhania, ginger and garlic.
  4. Add water nearly 3 and 1/2 cup. Add salt.
  5. Once it starts boiling, add soaked rice, salt, ghee and cover with a cloth tied lid.
  6. Heat a tawa and keep the pan on it and leave it on dum for 20 minutes. On a low flame.
  7. Garnish with fried paneer.
