ABOUT Bagara khana RECIPE

Bagara khana from Hyderabad is a plain biryani version without masala . A mild spiced rice version which is popular in Hyderabadi weddings and ceremonies .

Ingredients Serving: 4

  1. Basmati rice washed and soaked 4 cups
  2. Onion big thinly sliced 2
  3. Ginger garlic paste 1 teaspoon
  4. Green chillies 5
  5. Mint leaves 1/2 bunch
  6. Coriander leaves 1/2 bunch
  7. Cashews 3 tablespoons
  8. Black raisins 4 tablespoons
  9. Caraway seeds 1 teaspoon
  10. Cinnamon sticks large 1
  11. Cloves 5
  12. Ghee 5 tablespoons
  13. Salt to taste
  14. Water 3,5 - 4 cups as per the rice.

Instructions

  1. Soak Basmati rice for 10 minutes .
  2. In a pot , heat ghee .
  3. Add thinly sliced onions and fry till brown .
  4. Add the ginger garlic paste.
  5. Add whole Garam Masala ingredients listed .
  6. Add slit green chillies .
  7. Add mint leaves .
  8. Measure and pour water .
  9. Add salt .
  10. Cover and boil water .
  11. Add rice to the boiling water .
  12. Add a tablespoon of ghee to the water .
  13. Mix . Add coriander leaves . cover the pot and cook for 10 to 15 minutes depending on the rice used .
  14. Finally add the roasted cashews and black raisins .
  15. Fluff the rice with fork . Mix without breaking the grains .
  16. Serve hot with any rich gravies / raitas .
