Orange Malai

Ingredients to make Orange Malai

  • full fat milk 1 litre
  • Big orange 1 segmented
  • sugar 2 tablespoons
  • Sweetened Condensed milk 1/2 tin
  • Orange zest 2 tablespoons
  • Orange zest for garnishing
  • Orange juice 2 tablespoons
  • Frozen orange cups 3

How to make Orange Malai

  1. Firstly freeze orange cups in the refrigerator for 2 hours .
  2. In a deep , nonstick pan , add milk and start boiling till it reduces to thick creamy consistency . Shouldn’t be too watery nor too scooping tight .
  3. At this stage , pour condensed milk . Check sweetness and add sugar accordingly .
  4. Once the sugar dissolves , switch off the flame .
  5. Allow the milk mixture to cool to room temperature .
  6. In a bowl , transfer the cooled milk mixture .
  7. Add finely chopped orange segments.
  8. Add thinly julienned orange zests .
  9. Add 2 tablespoons orange juice .
  10. Mix this mixture well .
  11. Refrigerate the orange malai for an hour to thicken .
  12. Don’t freeze .
  13. After an hour , just before serving , take the frozen orange cups .
  14. Fill orange malai into the frozen orange cups .
  15. Garnish with orange zest and serve chill .

My Tip:

Reducing the milk to creamy consistency gives best results .
