Egg dipped chicken breast in tangy buttery sauce

Ingredients Serving: 2

  1. 1 chicken breast
  2. 1 egg
  3. 1 tbsp parcely or coriander leaves
  4. 2 tbsp cheddar cheese
  5. 1/2 cup chicken stock
  6. 1/2 cup orange juice
  7. 2 tbsp olive oil
  8. 1 tbsp butter
  9. Salt to taste
  10. Pepper to taste

Instructions

  1. TAKE 1 EGG, ADD SALT, 1/2 TSP PEPPER POWDER
  2. ADD 2 TBSP EACH OF CHOPPED FRESH CORIANDER & GRATED CHEESE, MIX WELL, SET ASIDE
  3. SLICE 1 CHICKEN BREAST INTO A BUTTERFLY CUT LIKE THIS
  4. COVER WITH A CLING FILM, FLATTEN IT OUT
  5. HEAT 1 TBSP EACH OF OLIVE OIL & BUTTER IN A NONSTICK PAN
  6. DUST THE CHICKEN BREAST WITH FLOUR
  7. COAT WITH THE READY EGG-CHEESE MIX
  8. SHALLOW FRY IN THE HOT OIL-BUTTER UNTIL GOLDEN BROWN ON BOTH SIDES
  9. THE CHICKEN IS DONE NOW, TAKE OFF HEAT
  10. ADD 1 TSP MINCED GARLIC IN THE SAME PAN, FRY FOR 1 MINUTE
  11. ADD 1/2 CUP EACH OF CHICKEN STOCK & ORANGE JUICE
  12. SIMMER FOR 2-3 MINS
  13. POUR THE SAUCE OVER THE CHICKEN BREAST
  14. GARNISH WITH SOME CHOPPED FRESH CORIANDER, JUICY CHICKEN FRANCESE IS READY TO SERVE
