Ingredients to make Rajasthani dal bati

  • For the dal:
  • 1 cup moong dal
  • 1 cup urad dal
  • 1/4 cup chana dal
  • 1 tsp red chilli powder
  • 1 tsp chopped ginger
  • 1/2 tsp turmeric powder
  • 1/2 tbsp cumin seeds
  • A pinch of asafoetida
  • 2 whole red dry chillies
  • 2 cloves
  • 2 cardamoms
  • 1 inch stick cinnamon
  • 2 bay leaves
  • 5-6 curry leaves
  • 2 medium sized tomatoes, chopped
  • Salt to taste
  • Oil 2 teaspoon
  • Chopped coriander leaves
  • For the bati:
  • Whole wheat flour 2 cups
  • Ajwain 1 teaspoon
  • 1/4 tsp baking soda
  • Pure ghee 1 cup

How to make Rajasthani dal bati

  1. Soak the moong dal, urad dal and chana dal for 1 hour. Then boil these dals by adding turmeric powder and salt till they are done then mash it well.
  2. Heat oil in pan on medium heat, add the jeera, asafoetida, bay leaves, curry leaves, cloves, cinnamon, cardamom, ginger and green chilli paste. Add the tomatoes too and dry red chilli. Saute it and mix well.
  3. Add the mashed dals in it and finish it by adding coriander leaves.
  4. For the bati, take the wheat flour, add salt, baking soda, ajwain in it and mix well. Add sufficient water and knead the dough.
  5. Preheat the oven at 180 degrees celsius.
  6. Roll from the dough, make a ball then press it and flatten. Grease a baking tray, place the baatis on it. Bake it at 180 celsius degrees for 15-20 minutes.
  7. When it's done, serve it with pure ghee to soak these baatis with the prepared dal.
