Ingredients to make Bhutay ko baath (fried rice) with Kalo (black) channa- a popular Nepali comfort food

  • 1/2 cup kalo (black) channa (soaked overnight)
  • A bowl of left over/ cooked rice
  • Patanjali Ghee (or any other brand)
  • Salt as per taste

How to make Bhutay ko baath (fried rice) with Kalo (black) channa- a popular Nepali comfort food

  1. Heat a non-stick pan, you can also use a 'kharai' if it is more convenient.
  2. Add a generous amount of ghee to the pan, you can also use oil but it will taste better with ghee.
  3. Next, add a handful of kalo (black) channa to the pan, add a pinch of salt and fry till it becomes firm. Cover the pan with a lid while it cooks. (I would advise you to soak the channa overnight so it becomes nice and soft)
  4. Once the channa has become a bit crunchy, add a bowl of rice into the pan and mix well with the channa. (you can use freshly cooked rice however I would advise you to use left over rice from the day before for best taste results.)
  5. Add a generous amount of salt and fry till it becomes crispy on the bottom.
  6. Once it becomes crispy on the bottom, stir it well so it becomes crispy proportionally. (If you like a more crunchy consistency then you can let the rice fry for 2 minutes extra on a moderately high flame.)
  7. Serve it hot for best taste.

My Tip:

Make sure you pre-soak the black channa over-night and use slightly stale (cooked the previous day) rice. While cooking on a high heat, do not leave pan unattended as it may get burnt.
