ABOUT Malligai poo idly RECIPE

Malligai poo (jasmine flower)idly refers to the flower like soft texture of the idly. This supersoft ricecake is the one i miss the most. Though i make idly very often, i hardly get the particular kind of fermentation. These idlies are a still a savouir as they store well in refrigerator for the busy midweek breakfast. Try your way with this beautiful rice cakes..

Ingredients Serving: 6

  1. 2cups idly rice
  2. 1 cup urad dal
  3. 1 cup sago
  4. Salt to taste

Instructions

  1. Wash and soak the urad dal, sago and rice seperately
  2. Grind the urad daltill smooth and fluffy
  3. Grind the rice and sago to a fine paste and mix well with the urad dal batter
  4. Add salt mix and set aside
  5. Allow it to ferment for about 4 to 5 hours depending on the climatoc conditions. In colder zones keep on warmed oven.
  6. Once the batter ia well fermented stir it around
  7. Oil the idly mould /ramikens well and set in a steamer.
  8. Steam for 15 minutes, cool for 5 minutes and then unmould the idly.
  9. Serve hot with chutney of choice
