Lau Bori - Bottle Gourd with Lentil Dumplings

Ingredients to make Lau Bori - Bottle Gourd with Lentil Dumplings

  • 1 small Bottle Gourd, peeled
  • 1 potato
  • 1/2 tsp Grated Ginger
  • 1 tej patta or Indian bay leaf
  • 1/4 tsp Kalonji or Nigella seeds
  • 1 green chilli, minced
  • 1 tbsp Posto bori or plain bori
  • Mustard oil
  • Turmeric
  • Salt

How to make Lau Bori - Bottle Gourd with Lentil Dumplings

  1. Peel and cut the bottle gourd and potato into thick match sticks.
  2. Heat the oil in a kadai and fry the bori and keep aside once done.
  3. Now add the kalonji, chillies, tej patta, and ginger into the hot oil and fry for a minute.
  4. Add the bottle gourd and potato and fry on high heat stirring well. After a minute cover and let the veggies cook.
  5. Add salt and turmeric once the vegetables are half cooked and cover the kadai again and cook on a low flame. Don't add any water.
  6. Add the fried boris and cook till the bottle gourd and potatoes are completely cooked through.
  7. Serve with soft, hot rotis.

My Tip:

Cook this in mustard oil for that authentic Bengali flavour.
