About Protein Packed Milk Bread

Being a vegetarian, I'm always concerned about my kids balanced diet, I want to give them just the best food i.e full of nutrients. Breakfasts and dinners are very well taken care of as it is had while at home but the lunches, they usually prefer sandwiches, but kids get bored of white and wheat breads. I am quiet happy with the result and moreover just a slice serves the required nutrients for the day.

Protein Packed Milk Bread

Ingredients

  • 250 gms/ 2 cups: All purpose flour /Maida
  • 200 gms/  1 cup: Granulated sugar
  • 50 gms/ 4 tbsp: Melted Butter
  • 2 tbsp oil, flavorless
  • 5 eggs at room temperature
  • 1 tsp vanilla essence
  • 1/2 cup milk
  • 1 and 1/2 tsp baking powder
  • 1/4 cup chocolate chips, dusted with flour (optional )

Steps

  1. Firstly sieve the all purpose flour and baking powder a couple of times. Set aside until use.
  2. In a deep bowl, add the melted butter, oil and sugar and beat using a hand blender/ stand mixer/ a whisk for a couple of mins until the sugar is completely mixed in.
  3. Continue whisking, adding one egg at a time, once all the eggs are whisked in beat this mixture until it's pale yellow in color.
  4. Next add the vanilla and milk, beat until it's combined well. Next stir in the sifted flour and baking powder, mix gradually and whisk until combined. Now stir in the chocolate chips and mix.
  5. Meanwhile grease a loaf tin with butter and dust it with flour. Now pour the batter into a greased pan, sprinkle few chocolate chips over the top too.
  6. Bake this in a preheated oven at 180°c or 350° f for 40 to 45 mins or until a skewer inserted comes out clean. Once baked perfectly remove and cool at the room temperature for atleast 30 mins. Later slice and serve.
My Tip: Use butter and eggs at room temperature. Do not use cool butter.
