Breakfast Bruschetta with Egg White Scramble & Pesto

Ingredients to make Breakfast Bruschetta with Egg White Scramble & Pesto

  • 4 slices of baguette or any bread which is crusty
  • 4 Egg Whites (Do not Beat)
  • 2 tbspns Olive Oil
  • 1 tbsp Extra virgin olive oil for dizzling
  • 4 Cherry Tomatoes
  • 2 Clove of Garlic
  • 4 Fresh Basil Leaves
  • Basil Pesto
  • Salt to taste
  • Freshly crushed pepper

How to make Breakfast Bruschetta with Egg White Scramble & Pesto

  1. Warm up Olive oil (1 tbspn) in a pan and transfer it to a cup.
  2. Infuse garlic cloves to the olive oil
  3. Put heat on a low flame add rest of olive oil in a pan.
  4. Add Egg whites and stir fold them with a wooden spatula.
  5. Remove from the pan once they start to scramble and gently blend them.
  6. It should be soft and moist with the process on slowly folding off / on the pan.
  7. Add Seasoning of salt, pepper and extra virgin oil once done.
  8. Halve cherry tomatoes and add garlic infused oil to it.
  9. Pan roast baguette slices on a pan.
  10. Apply thin coat of Pesto on Baguette slices.
  11. Layer up egg white scramble on the slices.
  12. Drizzle a bit of extra virgin oil.
  13. Tuck in Cherry tomatoes and Basil.
