Burmese Tomato Salad

Ingredients to make Burmese Tomato Salad

  • 1 medium onion, thinly sliced
  • oil for frying
  • 1/2 cup peanuts, fried
  • 1 tbsp jaggery, grated
  • 3-4 fresh red chilies, seeds removed
  • 1 tbsp sesame oil
  • 1 lime, juiced
  • salt to season
  • 1 kg medium tomatoes, blanched, skin and seeds removed, cut into quarters
  • To Garnish:
  • 1 tsp sesame seed
  • A handful of coriander, chopped

How to make Burmese Tomato Salad

  1. In a small shallow frying pan roast the sesame seeds over medium heat until toasted. Keep aside.
  2. Heat the oil in a wok and fry the onions till they are golden-brown.
  3. Blend half of the fried onions, peanuts, jaggery and chilies in a food processor till smooth.
  4. Transfer the paste to a clean bowl, add the sesame oil and lime juice, and season with salt. Mix thoroughly.
  5. Toss the tomatoes in the dressing. Garnish with coriander leaves, toasted sesame seeds and the remaining fried onions.
