About Eggless Funfetti Oreo Muffins Recipe

There are all things I love in the title itself. Funfetti is happily colourful and oreo is probably the best cookie to bake with. One hot hot summer afternoon I took a tiny break from work and was looking for stuff in my baking trunk. I found a big bag of sprinkles/funfetti and square muffin tray. I knew I had strawberry oreos, curd and flours... voila that is all you need.

Eggless Funfetti Oreo Muffins

Ingredients to make Eggless Funfetti Oreo Muffins

  • 1 cup whole wheat flour
  • 1/2 cup maida or all purpose flour
  • 1 cup curd or yogurt
  • 2 tsps vanilla essence
  • 1 tsp baking soda
  • 1 tsp Baking powder
  • Pinch of salt
  • 1/3 cup vegetable oil
  • 1/4 cup sprinkles
  • 1/2 cup white granulated sugar
  • 3 tbsps milk
  • 60 gms Oreo strawberry packets

How to make Eggless Funfetti Oreo Muffins

  1. Pre heat oven to 180C. Line muffin case with liners and keep aside. Crush the oreos in the packet itself without opening.
  2. Mix the yogurt and sugar with a whisk until the granules are dissolved. Add the baking soda and powder, mix well. Keep aside for 10 minutes. it will start to froth.
  3. Sift the whole wheat and all purpose flour with the salt. Add the flours, oil and sprinkles in the yogurt mix. It will be a little lumpy. Add the vanilla and milk.
  4. Fill the case half way and add some crushed oreos on top. Bake for 25 minutes or until a skewer inserted inside comes out clean.
